What doies the pasterization do to the milk, and how does it affect the whey protein produced from that milk?

During the process of heating which is part of the pasteurization, critical bonds holdings the cystine together are broken down into two separate cysteine molecule. In this form the essential glutathione precursor is no longer bio available in its form of choice for the liver to produce glutathione.

 

Therefore avoiding pasteurization of the milk before creating the whey protein is essential
